The story behind the recipe
Hot honey runs into the grooves of whipped feta, catching bits of roasted pistachio along the way. A scoop gets salty cheese, tangy yogurt and a little sweetness, followed by chili warmth and the nuts' crunch. It's a generous dip with a short ingredient list, and the topping is best left in uneven streaks so every bite isn't exactly the same.
Begin with the cheese
A block of feta in brine gives you a moist starting point for blending. Drain it, then let yogurt and olive oil soften its crumbly texture. Pre-crumbled feta varies in dryness and added ingredients; a convenient bag won't always blend like a block cut from brine.
The cheese should still be the main flavor. Whole-milk Greek yogurt adds tang and helps make the mixture spoonable, while a small garlic clove gives it a sharper edge. This isn't a place where doubling the garlic automatically improves the bowl: it's raw, finely dispersed and present in every scoop.
Whipping changes how feta feels. Its familiar crumbly pieces become a smooth base that can hold the nuts and honey on the surface. Scraping the processor bowl partway through helps catch cheese left above the blade, which is more productive than letting the motor run while dry pieces stay stuck at the side.

A topping to taste with the dip
Hot honey is honey seasoned with chili. Some jars offer gentle warmth; others have a much more forceful finish. Taste a little with the feta before choosing how heavily to dress the bowl. Sweetness, heat and salty cheese should all be noticeable, with none making the others disappear.
Coarsely crushed pistachios give a more satisfying crunch than nuts ground to dust. Their irregular pieces also catch in the swirls, keeping some of the topping in place as people scoop. Walnuts or pine nuts make the alternatives described in the notes, each with its own flavor.
Use a shallow bowl. It gives the topping enough surface to reach several portions, instead of leaving most of the honey on the first person's spoonful. A little oil around the ridges makes the dip easier to gather on bread and adds its own olive flavor.
The base can be made ahead and kept chilled, with the nuts and honey added at serving. That makes it a manageable first dish for a shared meal, especially beside pepper-and-walnut flatbreads or something fresh and crisp. Let the refrigerated base soften for the brief interval in the notes before dressing it; cold, firm cheese is much harder to scoop with warm pita.

- 1 small garlic clove, grated or finely minced
- 35 g roasted shelled pistachios, coarsely crushed
- 30 ml (2 tbsp) hot honey
- 2 pita breads, warmed and cut into wedges (for serving)
Equipment
Food processor- Silicone spatula
- Shallow serving bowl
Instructions
Pulse the feta and garlic
Place the drained, crumbled block feta cheese and grated garlic clove into the bowl of a food processor. Pulse 5 to 6 times until the cheese is broken down into fine gravel-sized pieces.
Whip with yogurt and olive oil
Add the plain whole-milk Greek yogurt and 30 ml of the extra-virgin olive oil. Process continuously on high for 2 to 3 minutes, stopping once halfway through to scrape down the sides of the bowl with a silicone spatula, until the dip becomes completely smooth, pale, and fluffy.
Spoon and swirl the dip
Transfer the whipped feta to a wide, shallow serving bowl and use the back of a spoon to make swirls in the surface.
Add pistachios, oil and hot honey
Scatter the coarsely crushed roasted pistachios over the cheese, drizzle with the remaining 15 ml of extra-virgin olive oil, and finish with the hot honey over the top.
Serve with warm pita
Serve immediately at room temperature alongside warm pita wedges.

Original recipe notes
These notes describe the original recipe. Quantities mentioned here do not change when you adjust servings.
Feta selection: A drained block of feta in brine is a good starting point for a smooth dip. Pre-crumbled products vary in moisture and added ingredients, so the finished texture may differ.
Make-ahead: The whipped base can be prepared, covered, and refrigerated at 4°C (40°F) or below up to 3 days in advance. Let sit at room temperature for 20 minutes before garnishing with nuts and honey, as cold temperatures firm up the emulsion.
Substitutions: Walnuts or toasted pine nuts can replace pistachios. For a dairy-free variation, try dairy-free feta and unsweetened plain almond yogurt, checking the product and pita labels. Adjust the texture as needed; substitutes may blend differently from the dairy version. Divide the 45 ml olive oil: use 30 ml for the dip and 15 ml for the drizzle.
