The story behind the recipe
The rice has plenty of flavor before a piece of chicken reaches the plate. Chicken stock, rendered fat, ginger and garlic season the jasmine grains; chili sauce, ginger sauce and sweet dark soy add heat, aromatic bite and sweetness alongside. This Singapore-style Hainanese chicken rice (海南鸡饭) uses a slow cooker for the bird and stock, while the rice gets its own short cooking stage.
What the slow cooker changes
Allow roughly four to six hours for the meal. The chicken needs less attention to the heat than during a stovetop poach, but it still needs checking. The rice cooks afterward with reserved stock, so leave time for that final stage. The slow cooker changes one part of the preparation, as our guide to modern methods for classic recipes explains.

Tender meat matters more than a full cooking window
Ginger, scallions and garlic flavor the chicken's cooking liquid. You can prepare the sauces during this longer stage, rather than leaving every component until the bird comes out. That overlap makes the meal easier to organize, though the chicken's temperature still determines when it is ready.
Breast meat can dry out during a long cook, and the skin becomes fragile. Start checking at the point given in the method and remove the bird when all the specified temperature checks are met. There is no benefit in completing the longest estimated time if the chicken is already cooked.
The ice bath cools the surface before carving; it cannot reverse overcooking. Careful lifting helps preserve the delicate skin. Keep the thermometer, a clean cooling vessel and a clear place to drain the bird ready before this stage begins.
The stock connects the components
Strained chicken stock goes into the rice, chili sauce and light-soy dressing, with the remainder served as broth. Each component carries some chicken flavor, but the seasonings differ. Starting with water or unsalted stock leaves room for the salt in the cooking liquid and the soy sauce added later.
Optional wings or carcass pieces add chicken flavor if the cooker has room for them. The whole bird must still fit within the appliance's fill limits, with its lid closing freely. Leave the extra pieces out when space is tight.
Chicken fat carries garlic and ginger flavor through the grains and gives the rice a light gloss. A little neutral oil can make up a shortfall in fat, as the ingredient list allows. The rice needs a light coating, with its cooking liquid adjusted separately for the variety and appliance.
Chili, ginger and sweet dark soy
The chicken is gently seasoned, and the rice is rich with stock and chicken fat. Chili sauce brings heat and citrus sharpness to cut through that richness. Ginger sauce adds a pungent bite from fresh ginger, garlic and scallion, while thick sweet dark soy adds sweetness and a deeper savory flavor.
Serve them on the side rather than mixing them into one sauce. You can then add chili without extra sweetness, or more ginger without more heat from the chilies. The light-soy dressing is different: it is spooned over the chicken, while the thick sweet soy is a condiment to add at the table.

Equipment
Slow cooker (5–6 liters, large enough for the whole chicken)
Food thermometer
Fine-mesh strainer
Small food processor or blender
Rice cooker or heavy saucepan with a tight-fitting lid
Instructions
Start the chicken
Prepare the chicken and aromatics
Trim the fat from the chicken cavity and reserve it for the rice. Pat the fully thawed bird dry without rinsing it. Put the sliced ginger, four large-cut scallions, crushed garlic and optional wings or carcass pieces in the slow cooker, then place the chicken breast-side down on top.
Fill and start the slow cooker
Add the water or unsalted stock and the 8 g salt. Aim for liquid at least halfway up the chicken, adding water if necessary, while following the appliance's minimum and maximum fill guidance. The lid must close freely. Start cooking immediately on HIGH for 1 hour, then turn to LOW.
Check the chicken temperature
Begin checking after 3 hours of total chicken cooking. Expect roughly 3½–5 hours, but remove the bird as soon as a thermometer registers at least 165°F (74°C) in the thickest breast and innermost thigh and wing, without touching bone. If using extra wings or carcass pieces, check their attached meat too. Keep the lid on between checks.
Prepare while the chicken cooks
Prepare the rice
While the chicken cooks, rinse the rice until the water is much clearer and drain thoroughly.
Prepare the ginger sauce
For the ginger sauce, put the grated ginger, small minced garlic clove, two finely chopped scallions and ¼ tsp salt in a heatproof bowl. Heat the 3 tbsp neutral oil until hot but not smoking, carefully pour it over the aromatics and stir. Cool briefly, cover and refrigerate until serving.
Cool the chicken and reserve the stock
Cool and drain the chicken
Lift the cooked chicken carefully into a clean ice-and-cold-water bath for 10 minutes, then drain thoroughly and brush with the 1 tsp sesame oil reserved for the chicken. If the rice isn't ready, refrigerate the chicken while you finish the meal.
Strain and allocate the stock
Strain the cooking liquid and skim off excess surface fat. Reserve 550–600 ml stock for the rice, 3 tbsp for the chili sauce and 2 tbsp for the dressing; keep the remainder for four small bowls of broth. If necessary, add water to the broth portion. Taste before adding more salt, and keep the rice stock hot.
Cook the rice separately
Fry the fragrant rice
Render the reserved cavity fat gently in a pan, then remove the solid scraps. Measure 2½ tbsp liquid fat, adding neutral oil if needed. Add the minced garlic and ginger for the rice and cook for 30–45 seconds without browning. Stir in the drained rice and cook for 2 minutes, coating the grains.
Cook and rest the rice
For a rice cooker, transfer the rice mixture to its pot with the pandan leaves and start with 550 ml hot stock, adjusting to the rice manufacturer's and appliance's guidance. Cook on the normal white-rice setting and rest covered for 10 minutes. Alternatively, put the fried rice, pandan and 600 ml stock in a heavy saucepan, bring to a boil, cover and cook on the lowest heat for about 15 minutes; rest off the heat, covered, for 10 minutes. Check tenderness and add a small splash of hot reserved stock if needed, cooking briefly until absorbed. Remove the pandan and fluff the rice.
Finish the sauces and dressing
Blend the chili sauce and mix the dressing
Blend the chili-sauce ingredients with their reserved 3 tbsp stock until finely textured. Taste and adjust the chili heat, acidity or seasoning using the listed ingredients. Mix the light soy sauce, reserved 2 tbsp stock, sesame oil and sugar for the dressing until the sugar dissolves.
Carve and serve
Carve and serve the chicken rice
Carve the chicken into bite-sized pieces, keeping as much skin intact as possible. Arrange over the sliced cucumber and spoon over a little dressing. Serve promptly with the hot rice, chili sauce, ginger sauce and sweet dark soy. Heat the remaining broth to a simmer, season to taste and serve in four small bowls with the optional sliced scallion. Add cilantro to the chicken if using.

Recipe notes
When adjusting quantities
Keep the whole-bird method at four servings. For a larger batch, use separate suitable cookers or cook birds in batches; never overfill. Scale rice and sauces separately, checking the rice cooker's capacity and liquid guidance. Cooking times and temperatures do not scale with servings.
Original recipe notes
These notes describe the original recipe. Quantities mentioned here do not change when you adjust servings.
The liquid amounts are starting points for this size of bird and rice batch. Slow-cooker shapes and jasmine-rice varieties differ. Follow the cooker limits first, and keep the rice's liquid adjustment separate from the chicken's cooking time.
Make the sauces while the chicken cooks. Refrigerate them after preparation and bring out only what you'll serve. The chicken can be served cool alongside hot rice; don't leave it on the counter throughout a long delay.
USDA guidance is to refrigerate cooked chicken and broth within 2 hours, or 1 hour above 90°F (32°C), in shallow containers and use within 3–4 days. For the rice, the UK Food Standards Agency advises cooling quickly, ideally within 1 hour, refrigerating and using within 24 hours. Reheat rice only once until steaming throughout; reheat chicken and broth to 165°F (74°C). Make the fresh sauces for the meal, refrigerate promptly and discard leftovers after 24 hours.
Read the scaling guide. Times, temperatures and equipment need their own consideration. Open the recipe tool to review and correct individual amounts.
